Do you know Sade? Her music conjures some kind of duality in me: one who wears a lace bodice and another who wears pantsuits that a certain Hillary would covet. Speaking of duality, smoothies kind of top this genre of foods. A smoothie is a drink, but it could very well be the entire meal—But you knew this already!
In preparation for the new year and the resolutions that we attach to them, why not consider eating more local fruits and vegetables by drinking and slurping them in smoothies. There are plenty of recipes on the internet including the two below which include the vitamin C packed pineapple. So give your blender a whirl in 2021 and try a smoothie for lunch instead of a heavy meal here and there and see how your body feels. I have a feeling it’ll thank you.

Nutty Pineapple Arugula Smoothie Recipe
INGREDIENTS
- pineapple, peeled, cored and cut into chunks (about 6 ounces)
- ¾ cup freshly squeezed tangerine/orange (or the juice that accumulates after cutting up the pineapple mixed with enough tangerine/orange juice to make 3/4 cup)
- 2 tablespoons mac nuts or your choice of nuts (about 3/4 ounce)
- ½ teaspoon chia seeds
- ¼ cup, tightly packed, baby arugula (about 1/4 ounce)
- ¾ cup, tightly packed (or 3 handfuls – about 1 1/2 ounces) mixed baby greens
- 1 quarter-size slice ginger, peeled
- honey for sweeting (optional)
PREPARATION
- Place all of the ingredients in a blender and blend for 1 minute, or until smooth.
Pineapple Carrot Smoothie Recipe
INGREDIENTS
- ½ cup freshly squeezed tangerine/orange juice
- 1 cup fresh, chopped pineapple
- 1 small or 1/2 large carrot, peeled and sliced or diced
- 2 ice cubes (optional)
- 2 tablespoons granola (optional)
- Carrot sticks or curls for garnish
PREPARATION
- Place all of the ingredients in a blender and blend for 1 minute, or until smooth.
